Thai style veg jelly fish

This recipe by 8 treasures veg restaurant uses veg jelly fish made from seaweed strips and is use as a cold appetizer before food.

250g shredded seaweed strips
1 tablespoon lime juice
1 tablespoon chilli sauce
1 tablespoon sour plum sauce
1 tablespoon sugar
1 tablespoon sesame oil
1 teaspoon black sesame seeds
2 tablespoons tomato sauce
1/2 teaspoon salt
3 lime leaves (cut into fine strips)

Method Rinse and soak seaweed strips in warm water for 3 mins
Discard water
Cut seaweed strips into smaller pieces
Put lime leaves and sesame seeds aside, combine all other ingredients with seaweed strips in a large bowl, mix well
Stir in sesame seed and lime leaves
Marinate at least 3 hours in the refrigerator, do not freeze
Serve chilled on top of shredded Japanese cucumber for that extra crunch!
